January: Snowdrop cake

This time of year stands out to me as being cold, still and calm. When thinking of a cake for this season I envisioned a snow white cake, delicate in flavor and texture but also that highlights the beautiful snowdrop flowers just starting to bloom around us.

The Snowdrop cake is a four layer delicate cardamom chiffon cake filled with espresso pastry cream and topped with a vanilla bean and white chocolate ganache. For decoration I crafted delicate snowdrops made of sugar and light dusting of sugar snow and edible moss.
